A Little Sun for Christmas

Simple, fast, and wonderfully festive. This savory puff pastry is incredibly easy to make, yet it looks stunning on any holiday table. Perfect for the festive season or to bring to friends’ houses, this version is filled with ricotta and spinach, but it can be made with any filling you like.

Ingredients

  • 2 sheets of round puff pastry
  • 250 g ricotta cheese
  • 300 g cooked spinach (fresh or frozen, well drained)
  • Salt, to taste
  • Nutmeg, to taste
  • Sesame, chia, or poppy seeds (optional)

Instructions

Prepare the filling:
Finely chop the cooked spinach and squeeze out all excess water. In a bowl, mix the ricotta, spinach, and nutmeg until smooth and well combined. Adjust the seasoning with salt (and pepper, if desired) to taste.
Assemble the pastry:
Place one sheet of puff pastry on a baking tray lined with parchment paper. Spread the filling evenly over the pastry, leaving a generous amount of filling in the center. Place the second sheet of puff pastry on top. Put a small bowl or glass in the center to mark a circle.

Create the sunflower shape:
Using a sharp knife, cut the pastry into strips from the bowl to the outer edge (like sun rays). Gently twist each strip one or two times. Remove the bowl from the center, brush the pastry with water or milk (or beaten egg for a more golden finish), and sprinkle with the seeds.

Bake in a preheated oven at 200°C for 25–30 minutes, or until golden and puffed. Let it cool slightly before serving. Enjoy warm or at room temperature.
