Recipe: Christmas tree icecream cake
by Blu
A sweet layered ice cream cake idea for xmas dinner/party (and at the same time a great way to use up leftover or extra Pandoro/xmas cakes).
In Italy we have many Christmas desserts, but the two most typical are Pandoro and Panettone, which are also one of the most common gifts, so it is quite common to have some more at home, and this is one of the ways to reuse/repurpose them as a new dessert.
In Italy we have many Christmas desserts, but the two most typical are Pandoro and Panettone, which are also one of the most common gifts, so it is quite common to have some more at home, and this is one of the ways to reuse/repurpose them as a new dessert.
What you’ll need:
- Pandoro (or sponge cake or leftover of your xmas cakes)
- ice cream (various flavors)
- 2 tablespoon liqueur
- 1 tablespoon sugar
- cocoa powder
- colored sprinkles
- chocolate buttons (like Smarties/M&M's)
- cardboard and aluminum paper for the cake shape
- plastic wrap
Instructions:
- make the shape of the Christmas tree with the cardboard, then cover it with aluminum paper and place it on a baking tray previously covered with plastic wrap.
- make a first layer with ice cream
- cover with some slices of pandoro (or your leftover cakes or sponge cake) close to each other and press them down.
- drizzle with chocolate syrup made with cocoa powder, liqueur, sugar and water (if there are children using milk instead of liqueur/water)
- repeat the procedure (ice cream layer, Pandoro layer, ...)
- cover with plastic wrap and freeze for at least one hour
- before serving decorate with sprinkles, chocolate button or whatever you prefer.
